Lobster Salad

Such a light and delicious salad that will leave you full and satisfied!

Perfect for making out of leftover lobster taco ingredients if you cook them the night before! Or the other way around! Prep all the ingredients for the salad and you'll have taco ingredients ready to go, just assemble!

Lobster Salad

Prep Time | Approx. 15 minutes | Servings: 2 | Calories per serving: ~156 cals

Ingredients:

4 cups Arugula

1 cup steamed and chilled lobster

1/4 cup pico de gallo

2 tbsp poblano cream sauce

 

Toss all ingredients in a bowl, mix and serve! If taking salad to go keep poblano cream sauce in separate container until ready to eat.
