Ahi Tuna Poke Bowl
Ever since our trip to Hawaii, Ahi Tuna has become one of our favorite fish dishes! Unfortunatley it can be a bit expensive but if you have a Costco membership they tend to have great deals!

This recipe is my own adapted version of SkinnyTastes Ahi Tuna.
Ahi Tuna Poke
Cook Time | Approx. 20 minutes | Servings: 2 | Calories per serving: ~256 cals
Ingredients:
1/2 lb. Sushi grade Ahi Tuna- cut into cubes
1/4 cup sliced scallions (separate the green parts and the white)
2 tbsp soy sauce
1 tsp sesame oil
2 tbsp sriracha mayo
1/2 cup shredded red cabbage
1/2 sliced carrot
1/2 cup sliced cucumber
sesame seeds for garnish
Combine the sushi, soy sauce, sesame oil and white parts of the scallion in a bowl. Mix well and set aside.
Cut the carrot and cucumber down the middle length wise to create to create two long pieces. Using a potato peeler carefully slice the flat side of the carrot and cucumber until you have about 1/2 cup full of slices each.
Assemble the red cabbage, carrot slices, cucumber slices, and ahi tuna mix in a bowl. Top with the sriracha mayo, green parts of the scallion, and sesame seeds.
