Smoked Salmon Breakfast Wrap
This smoked salmon breakfast wrap is a delicious and filling breakfast! Great for if you have a full day ahead of you. I have even made it as a breakfast for dinner and it was just as satisfying!

I found this recipe in my new book called Eat Beautiful. It is am amazing book by a lady named Wendy Rowe who does make-up for models! She goes through every season talking about which foods benefit your skin the most and at what times of the year you should eat them!

Ingredients:
3 eggs
1 tbsp almond milk
pinch of sea salt
1 tsp cayenne pepper
1/2 tsp raw coconut oil
1/2 avocado- sliced
handful of arugula
3 slices smoked salmon
lemon juice
Whisk the eggs, almond milk, salt and cayenne pepper together in a bowl
Melt the oil in a medium skillet over medium heat. Pour the egg mixture in the pan, tilting to make sure the egg covers the entire pan surface. Cook until golden brown then flip to cook other side.
Transfer the egg to a plate and top with arugula, avocado, then the smoked salmon. Squeeze lemon juice over the top.
Roll the egg up like a burrito or eat it with a fork! Enjoy!
