Cauliflower Fried Rice
Cauliflower is a great alternative to keep the calories and carbs low! Checkout this Southwest style fried rice. It pairs great with my Cajun Fried Catfish!

This southwest flavor inspired cauliflower definitely has a kick! Its a great light and healthy side dish to add to any dinner including chicken, fish, and tacos!
Cauliflower Fried Rice (Southwest Style)
Cook Time | Approx. 20 | Servings: 4 | Calories per serving: ~55 cals
Ingredients:
1 package of frozen riced cauliflower
1/4 cup frozen corn kernels
1/4 cup black beans
1/2 tsp paprika
1/4 tsp cayenne pepper
1/8 tsp onion powder
1/8 tsp garlic powder
pinch of salt
pinch of pepper
cilantro to garnish
In a large skillet heat the frozen riced cauliflower and frozen corn on a medium high heat until thawed.
Add the black beans paprika, cayenne pepper, onion powder, and garlic powder into the skillet.
Mix through until thoroughly combined. Continue cooking on medium high heat until the cauliflower has soften and all ingredients are heated through.
Remove from heat and garnish with freshly chopped cilantro.
