This 5 ingredient rice bowl is great to throw together on the go without lacking in flavor.
I love all of the colors in this bowl! It's so light and playful I always feel great after eating it. It gives you a nice carb and protein boost for the day without weighing you down and giving you that mid-afternoon slump. Substitute the rice for brown rice or quinoa for an even greater boost!
Sweet Thai Shrimp Bowl

1 cup white rice
1/2 avocado cut into cubes
6 grape tomatoes cut in half
6 oz (about 14 piece) shrimp cooked
2 tbsp sweet thai chili sauce
Optional: fresh parsley for garnish
Prepare the rice according to package instructions.
While the rice cooks, cut the tomatoes, avocado, and shrimp into chunks.
When the rice is finished cooking separate evenly into 2 bowls. Top the rice with half of the tomatoes, avocado, and shrimp.
Pour 1 tbsp of sweet thai chili sauce over top.
