Caramelized Veggie Tartlets
The tartlets are perfect bite size appetizers to bring to any part or potluck! They have been a great hit with all my friends!

The crispy phyllo dough texture pairs well with the melted cheese, browned asparagus, and caramelized onion.

Perfectly portioned bite size eats.

Caramelized Veggie Tartlets
Cook Time | Approx. 30 | Servings: 30 | Calories per serving: ~50 cals
Ingredients:
2 boxes of pre made phyllo dough shells (30 total)
8 asparagus stalks, thinly sliced down the middle and then cut into 1/2 pieces
1/2 yellow onion, thinly sliced into 1/2 inch pieces
1 garlic clove, minced
1 tsp olive oil
1 tsp water
1 tsp granulated sugar
1 cup shredded mozzerella
1/4 cup shredded parmesan
pinch of salt
pinch of pepper
Preheat the oven to 350 degrees.
While the oven heats up in a bowl toss the asparagus with the oil, salt, and pepper.
Heat a large skillet over medium high heat and add the asparagus. Heat until soft and slightly browned. Remove from skillet and set aside.
In same skillet heat the onions, water, and granulated sugar. Cook, stirring often, until the onions are brown and caramelized. Remove from heat and add to bowl with asparagus and mix.
Place the phyllo dough pastry shells on a baking sheet lined with aluminum foil. Place a pinch of mozzarella cheese in the bottom of each shell. Next place a small spoonful of the asparagus-onion mixture into each shell. Next layer a pinch of parmesan cheese followed by a generous pinch of mozzarella cheese.
Bake for 10 minutes and broil for 2 minutes or until golden brown and crispy.
