Dijon Rosemary Pork Tenderloin

Super moist, perfectly cooked absolutely beautiful pork tenderloin! I love this meal because I can prep it the night before and have it ready for dinner the next day! The ingredient list is so short and simple you will be shocked how easy it is!

I love the smell of fresh rosemary! I'd love to have my own herb garden one day :)

Honey Dijon Pork Tenderloin

Cook Time | Approx. 50 | Servings: 4 (4oz each) | Calories per serving: ~187 cals

Ingredients:

1 tbsp white wine vinegar

2 tbsp dijon mustard

1 tsp honey

1/2 tbsp fresh chopped rosemary

16oz pork tenderloin

Extra rosemary to garnish

 

Combine all ingredients in a ziplock baggie. Add the pork tenderloin and toss until well coated. Let marinate in the fridge for 2 hours or overnight.

When ready to cook, preheat the oven to 350 degrees.

Heat a skillet over medium high heat and place the marinated pork tenderloin in the skillet (saving the marinade) and sear until golden brown on all sides. Brush the top with the marinade left over in the bag and then discard.

Place the entire skillet in the oven and cook for 40-45 minutes or until it has reached an internal temperature of 160 degrees.

Remove from oven and garnish with fresh rosemary.
