Spinach Parmesan Gnocchi

The first time I had heard of gnocchi I was sitting in a fancy restaurant with my family reading my menu silently to myself and a member of the table inquires, "what's gnocchi!?" Only instead of saying it how it is actually pronounced (Know-Kee) he said Gah-No-Key. To which we all laughed and continued to have a 15 minute conversation of how it's pronounced only to find out that none of us even knew exactly what it was!

To my delight I find out it is these beautifully crafted dumplings with potatoes!!! And oh boy, do I love potatoes! While I haven't master the art of crafting these delicious dough bites from scratch I do enjoy creating new sauces to smother them in!

Spinach Parmesan Gnocchi

Cook Time | Approx. 20 min | Servings: 2.5 (1 cup each) | Calories per serving: ~314 cals

Ingredients:

1 tbsp I can't believe its not butter light

1 clove garlic

1/2 tbsp flour

1/2 cup fat free milk

1/4 cup parmesan cheese

3 cups spinach

1 package gnocchi (I use whole foods quarto fromaggio)

 

Heat the gnocchi according to package directions without the oil.

While the gnocchi is cooking melt the butter in a medium saucepan over medium high heat and add the garlic. Stir until fragrant.

Add the milk and whisk in the flour making sure it is all dissolve and creating a thick creamy like sauce.

Add in the spinach to the mixture and stir until the spinach has wilted down then add the parmesan cheese.

Finally in the same sauce pan add the prepared gnocchi and stir until combined and serve. Optional garnish with freshly cracked pepper and an extra sprinkle of parmesan cheese.
