Air Fried Chicken Nuggets

As a kid I lived off of fried chicken. Any restaurant, fast food chain, or other place we went to eat I would order the fried chicken. Didn't matter if it were nuggets, strips, or southern style, I had to have it! I even went as far as refusing to eat if they didn't have fried chicken!

 

Thankfully I've matured a bit since then and my tastebuds have grown. Now I love all sorts of flavors, foods and tastes. But naturally I had to bring out my inner child and create a healthy fried chicken recipe! These chicken nuggets are even made with WHOLE WHEAT flour for extra bonus points! 

 

Air Fried Chicken Nuggets

 

Cook Time: Approx. 40 min | Servings: 3 (10 nuggets per serving) | Calories per serving: ~291 cals

 

Ingredients:

 

14 oz chicken breast

 

1 1/4 cup whole wheat flour

 

1 cup fat free milk

 

1 egg

 

2 egg whites

 

2 tsp cayenne pepper

 

2 tsp salt

 

1 tsp pepper

 

Pam spray oil

Cut the chicken into nugget size pieces, should yield around 30 nuggets. Pour the milk into a bowl and add the nuggets. Let them soak while you prepare the other ingredients.

 

Divide the whole wheat flour into two bowls, one bowl with 1/2 cup and the second bowl with 3/4 cup. Add 1 tsp of cayenne pepper, 1 tsp of salt and 1/2 tsp pepper to each bowl.

 

Prepare another bowl with the egg and two egg whites. Whisk until combined.

 

Spray the bottom of your air fryer with your cooking spray.

 

Working a piece at a time, take the nugget out of the milk mixture and dip in the bowl with 1/2 cup flour. Then dip into the egg mixture, followed by a second flour coating in the bowl with 3/4 cup, then place the nugget in the air fryer. Be careful not to crowd the basket, the nuggets should not be touching. I cooked mine in two batches.

 

Repeat until all nuggets are cover. You will have some left over flour (about 1/2 cup) and left over egg, that is okay!

 

Spray the tops of the chicken nuggets with you pam cooking spray. Cook in the air fryer for 10 minutes on 350 degrees, pausing after 6 minutes to shake up the basket and then continue cooking for the remaining 4. Check your air fryer settings before cooking as every air fryer is different!
