Mandarin and Cranberry Salad
I have to admit, I'm not the biggest salad lover out their. I don't dream of eating bowl full of spinach and kale, or get lost in the leafy green powerhouses. But every once in a while I find a salad that satisfies my tastes and I can be contempt knowing I made a healthy choice!

To me, what completes this salad are the little bits of cranberries. The dried cranberries make me feel as if I'm eating little candies and give a subtle sweetness to the salad. Which for my big sweet tooth, makes it more enjoyable!
Mandarin and Cranberry Salad
Cook Time: Approx. 10 min | Servings: 1 | Calories per serving: ~168 cals
Ingredients:
3 cup spinach
1 oz feta crumbled
1/4 cup mandarin slices
1 tbsp dried cranberries
In a bowl place the spinach. Top with the feta cheese, mandarin slices, and dried cranberries. Toss the salad until well combine.
Top with you favorite salad dressing. I like to pair it with a balsamic dressing or sesame ginger dressing!
