Overnight Vanilla Chia Pudding

This is a great breakfast for meal prepping! You put together all of the ingredients the night before and it's ready in the morning! I don't know about you but I like to hit the snooze button one too many times and can easily wind up running late in the morning. It's times like those where I love to be able to just grab my breakfast and go without any morning prep work!

Chia seeds also have so many great benefits for you this is a hard recipe to pass up! I love mixing chia seeds with greek yogurts and milk. The way the chia seeds absorb the moisture and become soft pudding agents always fascinates me.

Overnight Vanilla Chia Pudding

Cook Time: Approx. 10 min | Servings: 1 | Calories per serving: ~166 cals


1 5 oz individual size vanilla greek yogurt light & fit

1/4 cup unsweetened vanilla almond milk

1 tbsp chia seeds

1/4 tsp vanilla extract

4 chopped fresh strawberries for garnish


Combine all ingredients except for the fresh strawberries in a bowl. Stir until well combined and place in a sealed container in the fridge overnight. Top the bowl with fresh strawberries in the morning and enjoy!
