Spinach is first up on my list of my three easy greens! Whenever I need a side dish in a hurry or just don't have much in the fridge it is easy to whip up my easy greens. The little bit of fresh spices and herbs used bring out a great flavor to what can be otherwise (in my opinion) bland greens.
I always have a bag of spinach handy in my fridge so this is an easy, go to, quick-fix for me!
Easy Greens- Spinach
Cook Time: Approx. 5 min | Servings: 1 | Calories per serving: ~49 cals
3 cup spinach
1/2 tsp coconut oil
1/2 tsp red pepper flakes
1 clove minced garlic
In a large skillet heat the coconut oil over medium high heat until melted.
Add the three cups of spinach, red pepper flakes, and garlic. Sauté the spinach until it has wilted down and most of the moisture is out of the pan (about 3 min). Sprinkle with a pinch of salt and pepper to taste. Serve and enjoy!
