Easy Greens- Asparagus

Second on my easy greens list is asparagus! These guys I love for the simplicity of it. You can bake them in the oven or slap them on a grill if its that kind of dinner night! Either way you'll love them!

Asparagus was one of the few greens I loved (and I use the word love very loosely) to eat as a kid. I never cared for vegetables on my plate but give me some asparagus and 6 year old me would be forever grateful I didn't have to eat those steamed green trees (broccoli).

Easy Greens-Asparagus

Cook Time: Approx. 20 min | Servings: 2 | Calories per serving: ~52 cals

Ingredients:

20 asparagus stocks (rough ends cut off)

1 tsp olive oil

1/2 tsp salt

1/2 tsp pepper

Optional:

1/4 cup parmesan cheese

 

Heat oven to 425 degrees.

Line a baking sheet with aluminum foil.

In a zip lock baggie combine the asparagus, oil, salt and pepper. Shake until asparagus is thoroughly coated. Take out of the zip lock baggie and spread evenly on the baking sheet.

Bake for 12-15 minutes or until tender

For extra fun you can even sprinkle some parmesan cheese on top!
