Southwest Turkey Salad

I don't know about you but at my house it seems like we have a mountain of turkey left! Now that thanksgiving has passed and I'm trying to be a little more health conscious I started exploring turkey salads!

 

Of course there are traditional ones such as a turkey cobb salad but I found a great liking to my southwest style turkey salad! Simple, light and delicious. It's semi homemade so it makes it even quicker if your in a hurry.

 

Southwest Turkey Salad

 

Cook Time: Approx. 15 min | Servings: 1 | Calories per serving: ~287 cals

 

Ingredients:

 

2 oz left over turkey shredded

 

2 cups of mixed greens

 

2 tbsp lightly salted tortilla strips by fresh gourmet

 

2 tbsp finely shredded sharp white chedder

 

2 tbsp Light Southwest Ranch salad dressing

Mix all ingredients in a bowl and toss until throughly combined!
