What's Cooking: Avocado Chicken Salad
This weeks recipe test was an absolute success! I tried out a chicken salad recipe that I found on Natasha's Kitchen! Now don't be fooled by that "s" word... salad. This is so much more filling an indulgent then what I would normally associate with a salad or a normal "chicken salad". I was full but feeling healthy and light. There were so many good flavors and great ingredients I didn't have to feel guilty eating it.Traditional chicken salads are full of mayonnaise that can be fattening, but not this one!
Its got lean protein, healthy fats, fresh herbs, and veggies; What more could you want?

When creating this recipe I started by cutting ingredient sizes in half as I had no need to make so much of it just for me. I still however even had left overs to pack for me to take to work for lunch during the week!
I used the chicken breast from a rotisserie chicken which I think helped immensely to liven up the flavors. Chicken breasts then to dry out when baked in the oven but there is something so juicy about rotisserie chicken that makes me love to use it in recipes that call for shredded chicken. It also saves time on the prep not having to cook the chicken. I also cheated a little on prep time by using bacon bits rather than cooking full bacon strips. I'd imagine its less greasy this way, but I possibly missed out on the deliciousness that grease may have added to the recipe. Oh well, its the cooks easy way out!
Overall it tasted great and it was so quick in preparation that I didn't have to spend hours in the kitchen for a fulfilling healthy meal. I'd imagine this would taste great on a sandwich as well!
